Q: I want to ise this instead of backsplash will it hold up until i am able to afford a real backsplash.?

We used it as a backsplash - NOTE: you can not turn the paper 180 degrees and try to match it. the hex's only match one way. so we chose to lay all paper horizontally rather than vertically. to use less cuts / paper

Q: How did you get the hexagons to line up? Every hexagon is about a millimeter off and I can’t get it to work without compensating with extreme creases.

I suggest you try to combine different edges together. There are some splicing problems, but there is definitely one edge that can be spliced.

No! It is way too thin. Even on a non textured wall it's still see-through. I threw mine out and didn't use it. You're better off getting stick on backsplash tiles.

Q: Will this work well or hold up in a laundry room?

I used this wallpaper in my bathrooms recently. It was pretty easy to put up. You just have to go slow and be patient. It’s only been up for a week but it’s holding up well. The material is think so I’m confident it will hold up. If you are concerned about moisture you could probably use wallpaper glue to add additional adhesive.
